Puckerbrush and its orchards are located at Newhall Farm in Reading, VT, to the west of the Connecticut River at an altitude of approximately 1800 feet. Many of our apples come from our two oldest orchards. The varieties are unknown, but the age of these trees and the quality of their fruit suggests they were planted prior to prohibition specifically for cider production. We supplement this harvest with apples from the many self-seeded trees growing on and around the farm, along with fruit from younger trees that we have planted over the past 25 years.

Made from a blend of apples from wild trees and the old orchards at Newhall Farm. Some crabs and European cider varieties were added to boost tannins. The cider was fermented spontaneously with native yeasts, with about half of the batch spending time in old bourbon and rye barrels. Briskly sparking and dry, this cider is medium bodied with refreshing acidity and moderate tannins. Fruity, with some vanilla and spice contributed by the barrels, followed by baked apple and lemon. The finish is dry and cleansing. It should evolve in bottle for several years at least.

Puckerbrush Pomace

After pressing our estate grown red wine, the left-over pomace was added to freshly pressed apple juice from our younger trees. The mixture fermented for a week before re-pressing for maturation in tank. This dry, sparkling cider pours a pale garnet. The nose is delicate with hints of raspberry, cherry, and apple. The fruits continue on the palate, along with minerality and a refreshingly acid finish. This cider is very food friendly and pairs well with just about anything.

Puckerbrush Ice Cider

Some of our apples were allowed to freeze on the tree prior to harvest in December and January. This frozen fruit was then pressed very slowly, and the first fraction of the press run reserved to make this cider. Serial racking and temperature management were used to arrest fermentation with residual sugar of 95 g/l. The cider has intense apple character along with caramel, brown sugar, and wet rocks. Though it is drinking very well now, this cider should continue to develop in bottle indefinitely.
