2023 Wrapped: Cider and Wine

As we bid farewell to the year, we can’t help but think back to the amazing blend of flavors and knowledge shared by our newly merged teams. When we teamed up as a combined entity, Eden Ciders, IAPETUS Wines, and Shelburne Vineyard, we knew we would be embarking on a journey of shared values together – and the ups and downs that come with that too. What we couldn’t know at the time of our union was how wonderful getting to share our passions for wine and cider respectively would feel – and how lucky we are to work in the Vermont landscape together. So, in the spirit of wrapping up the year on a high note, our crew got together and handpicked some wines and ciders for your end-of-year celebrations!

Champagne, but make it Vermont Grown

Our Champagne style wine and cider refers to the traditional method of producing sparkling beverages typically associated with Champagne wine. This method is also known as the “Méthode Champenoise” or “Méthode Traditionnelle.” This traditional method is used not only for Champagne but also for many other sparkling wines and ciders – like Eden Ciders Brut Nature. Both Brut Nature and Figure 2, made in the Pet Nat style, feature fine bubbles, complex flavors, and that satisfying mousse of foam that elevates your favorite glassware.

Notes of Dried Apples, Biscuit, Citrus, Green Hay

Brut Nature takes at least two years to make it from harvest to your table. The aging process gives this dry, sparkling cider a depth and complexity of flavor that makes a perfect dinner companion for a wide variety of food.

Champagne with zero pretension.

The nose is perfect with all the delicious citrus and stone fruit aromas of the La Crescent grape, dancing on subtle bubbles. The medium body has a refreshing weightiness that excites the palate.

We love a red, so here are some winter-worthy red wines that are sure to captivate your palate and enhance the festive ambiance of your table. With deep berry undertones, these wines are the perfect companions for the season’s rich and hearty dishes. Primary fruit aromas and flavors of cherry and raspberry are joined by notes of chocolate, tobacco and leather in this elegant, medium-bodied wine. The finish is long, smooth and tannic. Ready to drink now, and will continue to age gracefully for at least 5 years.

Terrane 2021

Embrace the shift

Notes of berries, blue, red, black, purple, plum!

Crafted from our Petite Pearl grapes, Terrane is a dry red with medium body and acidity. The nose of this wine is full of black currant and red plum, with a touch of smoky mocha. On the palate, Terrane is an overflowing bowl full of berries. The finish is lengthy, smooth, and lightly tannic.

The juicy palate of Whimsey Meadow Rosé maintains a beautiful balance, achieved by the natural mouthwatering acidity inherent in our cold-climate grape varieties. A gentle sweetness graces the mid-palate, leading to a refreshingly crisp and bright finish that lingers on the taste buds.

Imperial 11° Rosé

A dry-yet-fruity rosé made with 100% Vermont heirloom apples, infused with red currant juice, and smoothed with just a touch of ice cider. Superbly juicy without being sweet, just off-dry and gently fizzy, with bright acidity and chewy tannic structure

Cellar Series: Foxwhelp 2022

Grab an oyster, grab a friend.

Notes of lemon-lime, wet stone and new leather. Spontaneous fermentation sets the stage, allowing the apples’ innate character to shine through. Aged in stainless steel for seven months to develop layers of complexity and texture. We add a touch of our ice cider to kickstart secondary fermentation, resulting in an ultra fizzy, bright cider with medium – low tannin.

Tectonic 2021

A wild and magical creature.

Notes of apricot, peach and citrus.

The aroma is complex and layered, with notes of apricot, peach, raisin, white pepper, tea, rose water, and floral attributes; you could keep your nose in this all-day. This vintage is medium-bodied and has power, yet is balanced. On the palate, the tannins and acidity are integrated, with a tartness and texture reminiscent of tea and thick-skinned tropical fruits – you’ll keep coming back.

Heirloom Blend Ice Cider

An heirloom apple dance.

Notes of baked apple, pineapple, citrus and turbinado.

Our flagship Ice Cider is made with over 15 heirloom apple varieties all grown in Vermont. The combination of heirloom apples creates a beautifully textured, still, sweet dessert style cider that is elevated by a backbone of bright acidity. Drink it on its own, after dinner, in a cocktail – with a drink this good, the possibilities are endless!
